ORGANIC - BIODYNAMIC - MINIMAL INTERVENTION

At 300m elevation in Predappio, Pandolfa enjoys cooling Adriatic breezes that shape its wines’ distinct character. The historic 17th-century estate, now owned by Marco Cirese and Alice, has embraced a low-intervention, organic approach under the guidance of agronomist Francesco Bordini.

The estate removed 100 hectares of vineyards to restore the native Forlì ecosystem, benefiting the remaining vines naturally—without chemicals or machines. The limestone, yellow clay, and fossil-rich soils provide ideal conditions for Sangiovese, enhancing its fragrance and texture. Sustainable farming methods, like barley cover crops to manage nitrogen and forest buffers for pest control, further support the vineyard’s health.

Winemaking at Pandolfa is minimalistic, with stainless steel fermentation and aging in large Slavonian oak botti. New oak use is reserved for external projects, allowing Pandolfa’s pure fruit expression to shine. As more vineyards gain organic certification, the estate continues its commitment to terroir-driven wines of elegance and authenticity.

2020 SANGIOVESE ‘FEDERICO’

The Sangiovese grapes are fermented in temperature controlled stainless steel tanks. The contact of the wine with the skins lasts an average of 14 days, followed by malolactic fermentation. Minimum 6 months in stainless steel tanks and a minimum of 3 months in bottle. Our focus is on producing Sangiovese in the fine, pure expression for which Emilia-Romagna is renowned
