SUSTAINABLE - MINIMAL INTERVENTION

The blurry line between Art & Science becomes an artform in itself. This line has been redrawn over every vintage.

After finishing wine school Paul spent 9 years making wine throughout the world. From Santa Ynez, to Stellenbosch, the Rhinegau, Cyprus, Italy (Piemonte & Abruzzo) & India. This cast a wide vinifera net and gave him a deep understanding of what those wines meant to the people that grew the grapes. It wasn’t just booze in a bottle, these were wines that had person- ality and captured the very essence of their origins.

Moving back to Australia in 2008 with his partner, Bianca, they drove straight past Margaret River to the untamed wilds of the Deep South in the Great Southern. A climatic and geological wonderland, The Great Southern boasts some of the best viticultural sites in Australia, and in 2009 Paul & Bianca decided to start making wines for themselves.

Paul & Bianca are based in the idyllic coast town of Denmark, and in 2013 took one step further and purchased Denmark’s oldest vineyard, Karriview. Located just 11km out of town in the Scotsdale Valley. Karriview vineyard produces small parcels of Chardonnay & Pinot Noir that could be described as Grand Cru. In 2021 Paul & Bianca introduced another iconic vineyard into the fold, Bouverie Vineyard. Planted in 1968, Bouverie is the 2nd oldest vineyard in the Great Southern. Planted by Plan- tagenet Wines founder Tony Smith, Bouverie is planted to Syrah, Cabernet Sauvignon, Pinot Noir, Chardonnay & Sangiovese. These grapes produce wines of great depth, elegance and personality.

Apart from their deeply rooted passion for the Great Southern, Paul & Bianca also have a love for all things alternative and Italian. In 2020 they set up a winemaking project in Italy, Piemonte producing their first Italian vino for the Australian market.
